The yellow melon has an intense yellow color on the outside, while the pulp is white and sugary. Made up of 90% water which gives it a high satiating power while still remaining a low-calorie fruit. It contains a lot of iron, phosphorus and calcium, promoting bone health. Furthermore, the high beta-carotene content helps the production of melanin.
Melon is extremely versatile, lending itself to the preparation of smoothies, centrifuged foods, mixed salads, ice creams, sorbets and as an appetizer.
